Pittige runderstoofpot met spitskool

Deze pittige runderstoofpot met spitskool combineert malse Ierse rundernek met smaakvolle specerijen en groenten. Een perfecte, verwarmende stoofpot voor koude dagen.

Ingredients:

  • 1.5 kilos of Irish beef neck
  • 2 potatoes floury
  • 2 onions
  • 2 shallots
  • 4 cloves of garlic
  • 2 tablespoons butter
  • Dash of oil
  • 3 star anise
  • 400 ml coconut milk
  • 1 dl soy sauce manis
  • 1/2 dl soy sauce asin
  • 4 centimeters ginger
  • 6 juniper berries
  • 2 tablespoons flour
  • 3 cloves
  • 1 chili pepper (red)
  • 3 bay leaves
  • 1 dessert spoon cumin
  • 1 dl sweet chili sauce
  • 2 cinnamon sticks
  • 1 tablespoon turmeric
  • 1 kohlrabi diced
  • A few leaves of fresh coriander

Ingredients for pointed cabbage salad

  • 500 gr pointed cabbage
  • Butter
  • Salt and pepper

 

Why stew with Irish beef?

Irish beef stew is the secret ingredient to a delicious stew! Our cattle get a lot of exercise because they are outside for an average of 220 days a year. Then they eat fresh juicy grass. But even in the winter months they mainly eat grass, in the form of hay and silage grass. For example, their diet consists of 90% grass and you can taste it! Lots of exercise and lots of grass gives Irish beef a nice fat marbling and a full intense flavor. Perfect for the stew! Enjoy your meal!

Procedure:

  1. Sprinkle meat with salt, pepper and flour
  2. Heat oil and butter in the pan
  3. Saute the onions, garlic, ginger, pepper, and all the dry spices
  4. Then brown the meat all over
  5. Deglaze with sweet chili, the soy sauce manis and asin
  6. Cut the potatoes into cubes and add
  7. In a separate pan, turn on the kohlrabi and then add to the stew
  8. Let it simmer in the cast iron pan for 4 hours or in the pressure casserole for 1 hour and 15 minutes.
  9. Let the stew simmer for another 15 minutes without a lid, stirring occasionally
  10. Garnish with the coriander leaves
  11. Lukewarm pointed cabbage salad: Stir-fry all ingredients in a little butter
